- 1 pkg (432 g) Duncan Hines® Moist Deluxe Spice Cake Mix
- 3 eggs
- 250 mL pumpkin purée
- 150 mL milk
- 75 mL vegetable oil
- 30 mL all-purpose flour
- 5 mL baking powder
Directions

Step one
Preheat oven to 190°C. Line 16 muffin cups with paper liners.

Step two
In large bowl, using handheld electric mixer, combine cake mix, eggs, pumpkin, milk, oil, flour and baking powder. Beat on medium speed for 2 minutes or until smooth.

Step three
Divide batter evenly among muffin cups, filling each about two-thirds full.

Step four
Bake for 15 to 20 minutes or until toothpick inserted in centre of a muffin comes out clean.
Tips
If preferred, substitute pumpkin with mashed cooked sweet potato or butternut squash.
