Ingredients
- 2 tbsp (30 mL) Olive oil
- 1 Green pepper, diced
- 2 Cloves garlic, minced
- 2 tsp (10 mL) Taco seasoning
- 1/2 tsp (2 mL) Salt
- 4 cups (1 L) Reduced-sodium chicken broth
- 1 can (283 g) Ro*Tel® Original Diced Tomatoes & Green Chilies
- 1 cup (250 mL) Shredded cooked chicken
- 2 tbsp (30 mL) Lime juice
- 1/2 cup (125 mL) Shredded Cheddar cheese
- 1/4 cup (60 mL) Sour cream
- 2 tbsp (30 mL) Finely chopped fresh cilantro
Directions

Step one
Heat oil in large saucepan set over medium heat; cook green pepper, garlic, taco seasoning and salt for 3 to 5 minutes or until slightly softened.

Step two
Stir in broth and Ro*Tel® Original Diced Tomatoes & Green Chilies; bring to boil. Stir in chicken. Reduce heat to medium-low; cook for 10 to 15 minutes or until flavours are blended and soup is flavourful.

Step three
Stir in lime juice; divide among bowls. Garnish with cheese, sour cream and cilantro.
Tips
Substitute Monterey Jack cheese or Tex-Mex blend for Cheddar cheese if desired.
