Ingredients
- 1 pkg (10 oz/225 g) Gardein™ Meatless Chick’n Strips
- 8 oz (250 g) vegan buckwheat vermicelli noodles or soba noodles
- 8 cups (2 L) sodium-reduced vegetable broth
- 1/2 cup (125 mL) soy sauce
- 4 tsp (20 mL) rice wine vinegar
- 1 tbsp (15 mL) minced fresh ginger
- 1 tbsp (15 mL) agave syrup
- 4 green onions, thinly sliced
- 4 tsp (20 mL) toasted sesame seeds
Directions

Step one
Prepare Gardein™ Meatless Chick’n Strips according to package directions. Prepare noodles according to package directions.

Step two
Meanwhile, in saucepan, combine broth, soy sauce, rice wine vinegar, ginger and agave; bring to boil. Reduce heat to medium-low; simmer for 5 minutes.

Step three
Divide noodles and broth among 4 bowls. Arrange Chick’n Strips on top. Garnish with green onions and sesame seeds.
Tips
- Add matchstick carrots and baby spinach to soup if desired.
- Substitute tamari sauce for soy sauce if desired.
