Ingredients
- 1 tbsp (15 mL) vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp (30 mL) chili powder
- 2 tbsp (30 mL) brown sugar
- 2 tbsp (30 mL) honey
- 1 tbsp (15 mL) cider vinegar
- 1 can (540 mL/19 oz) Aylmer Accents Italian Diced Tomatoes
- 2 cans (398 mL/14 oz each) young green jackfruit in brine (not syrup), rinsed well
- 6 Udi’s Gluten Free Classic Hamburger Buns
- 3 cups (750 mL) prepared coleslaw
- 2 large ripe avocados, pitted and sliced
- ½ tsp salt
- ½ tsp pepper

Step one
Heat oil in large nonstick skillet set over medium heat; cook onion for about 5 minutes or until softened. Stir in garlic, chili powder, brown sugar, honey and vinegar; cook for about 2 minutes or until fragrant and well combined.

Step two
Add tomatoes, jackfruit, salt and pepper to skillet. Bring to boil; reduce heat and simmer for 15 to 20 minutes or until sauce is thickened. Remove from heat.

Step three
Use two forks to shred jackfruit into strands; return to skillet. Simmer for about 5 minutes or until sauce is thickened. Divide evenly among buns; top with coleslaw and avocados.
