Ingredients
- 1 cup (110 g) matchstick carrots
- 1/2 cup (123 mL) matchstick daikon
- 1/2 cup (150 g) matchstick cucumber
- 1 jalapeño pepper (90 g), thinly sliced
- 2/3 cup (150 mL) rice wine vinegar
- 2 tbsp (30 mL) white vinegar
- 1 jar (355 mL) VH® General Tao Sauce, divided
- 2 tbsp (30 mL) canola oil
- 12 Gardein® Meatless Meatballs
- 1 baguette (250 g), halved lengthwise and cut into 4 sections crosswise, toasted
- 1/3 cup (17 g) packed cilantro leaves

Step one
Stir together carrots, daikon, cucumber, jalapeño, rice wine vinegar, white vinegar and 2 tbsp VH® General Tao Sauce. Let stand for 15 minutes.

Step two
Heat oil in large skillet set over medium-high heat. Cook Gardein™ Meatless Meatballs for 5 to 8 minutes or until browned all over. Stir in remaining VH® General Tao Sauce; bring to boil. Cook for 3 to 5 minutes or until meatballs are heated through and well coated in sauce.

Step three
Assemble meatballs in baguette with pickled vegetables and cilantro.
Tips
For easy meal preparation, pickled vegetables can be prepared and refrigerated overnight.
Substitute thinly sliced radishes for daikon if desired.
