- 1/2 cup (125 mL) chopped dried apples
- 1/2 cup (125 mL) chopped dried raisins
- 1/2 cup (125 mL) chopped dried apricots
- 1/2 cup (125 mL) chopped dried cranberries
- 1/2 cup (125 mL) chopped crystallized ginger
- 1/2 cup (125 mL) candied lemon peel
- 1/4 cup (60 mL) all-purpose flour
- 1 pkg (432 g) Duncan Hines® Spice Cake Mix
- 1 cup (250 mL) unsweetened applesauce
- 4 large eggs
- 1 1/2 cups (375 mL) Duncan Hines® Cream Cheese Frosting

Step one
Preheat oven 325°F (165°C). Line two 8- x 4-inch (20 x 10 cm) loaf pans with enough parchment paper to overhang edges. Spray with cooking spray. Toss dried apples, raisins, apricots, cranberries, ginger and lemon peel with flour; set aside.

Step two
Using electric mixer, beat cake mix, applesauce and eggs until smooth; stir in dried fruit mixture. Pour into prepared pans.

Bake in centre of oven for 45 to 50 minutes or until toothpick inserted in centre comes out clean.

Let cool in pans on rack. Remove cakes from pan using parchment paper handles. Spread frosting over top.
Tips
• Sprinkle cakes with chopped pecans, almonds or walnuts.
• Brush cakes with rum or brandy before frosting if desired.
• Use your favourite mix of dried fruit: dates, currants, dried cherries, blueberries, mango or pineapple all work well.
